Bag any deer from within 9 yards
This is easiest on Mission 6, Black Tail Sitka Hunt (the 3rd hunt in the mission). The deer don't seem to startle easily, so crouch down and move up close to them with the Zoom in with LT and hit A to see how far away you are. Slowly move to within 9 yards and take your shot.
