I have 2x 8GB ddr4 sticks. Each in separate slots but CPU-Z shows single channel????

Do you have them installed in different channels on your motherboard?

Usually on motherboards with 4 slots it will be the following (from left to right on your board) :

SLOT 1 - Channel A
SLOT 2 - Channel B
SLOT 3 - Channel A
SLOT 4 - Channel B

So make sure you have the 2 modules installed in Slots 1 & 3 or 2 & 4 to enable dual-channel mode.

I fixed it thank you
I set my ram frequency to 3200mhz because thats what it is. CPU-Z shows 1599MHZ. is that normal?

No, like Adam said, DDR stands for Double Data Rate, meaning each module has 2 dataticks per clock cycle. programs like CPU-Z will only show the singular clock frequency.

Therefore 1600MHz = 3200MHz.
