Please take a look at what I built and let me know if it meets my needs for video editing and gaming:

Video editing: Nothing too intense, but should be able to handle 4k video and render in decent times. Should also handle most things in After Effects as I make titles and animations.

Gaming: I want to be able to play most games at 60+fps, games like Fortnite and ESO.

What programs do you use for editing? Just AE?
Are Fortnite and ESO the only games you'll be playing, anything more demanding?
Will you be overclocking?

Mini-ITX motherboard and low profile CPU cooler makes no sense, considering you have a full sized ATX case. Also, on that note, don't buy an S340 in 2018 lol. It was great when it released in 2014 but there are better options now. Or at least spend the extra $10 for the S340 Elite. Paying almost $400 for a GTX 1060 is WAYYY too much. Do not pay that much for it. Buy a used GTX 980Ti for less than that and get better performance, or spend $200-250 for a GTX 970/980 which would perform similarly to a GTX 1060. Also pls, no, 1080p monitor in 2018, and with a $1500 budget, ew.

1440p monitor instead of 1080p. 850 EVO is a great SSD, but the MX500 is a better option IMO since it's $30 cheaper. However, if you do want to spend a little extra for the better SSD, don't get an 850 EVO, get an 860 EVO. The 860 EVO is $10 cheaper than the 850 EVO, performs almost exactly the same but will last significantly longer. If you're overclocking, I'd probably spend a bit more on a better CPU cooler, like a Cryorig H7 or Be Quiet! Dark Rock (Pro) 3/4. If you're not overclocking, drop to a locked SKU(like an i7-8700, non K) and a B360/H370 motherboard to save some money. I included a better case, but NZXT S340 Elite, Phanteks Enthoo Pro M TG, and Fractal Design Meshify C are some good alternatives. The PSU I included isn't great, but it would do the job and is stupid cheap. That said, I'd personally definitely spend the extra $25 for the CX450M. Lastly, I included the cheapest 6GB 1060 listed on PCPP, but $320 is still too much for a 1060 IMO, you should be able to find a 980Ti for $320-350 pretty easily. If you were to go with a 980Ti, I'd probably recommend spending a bit more on PSU and get something better than the CX450M. The CX450M or EVGA 500B would be fine for a GTX 970, GTX 980, or a 1060.

A CX550M or this;

would be fine for a 980Ti.

Thanks for the advice, I made some changes to the build, I am also buying a used asus GTX 1070 turbo for $400.

Edit: Can you take a look at this image and let me know if you see any red flags? Keep in mind, I don't know much about these things, but I guess buying used makes me nervous.

It is an Asus GTX 1070 Turbo. [ Register or Signin to view external links. ] . I'm a little concerned about the raised silver part along the top right.
