My current builld:
CPU: Intel - Core i5-8600K 3.6GHz 6-Core Processor (£246.79 @ Alza)
CPU Cooler: be quiet! - Dark Rock Pro 3 67.8 CFM Fluid Dynamic Bearing CPU Cooler (£66.00 @ Aria PC)
Motherboard: Asus - Prime Z370-A ATX LGA1151 Motherboard (£157.75 @ More Computers)
Memory: G.Skill - Ripjaws V Series 16GB (2 x 8GB) DDR4-3000 Memory (£150.55 @ Amazon UK)
Storage: Samsung - 850 EVO-Series 500GB 2.5" Solid State Drive (£125.94 @ Aria PC)
Video Card: EVGA - GeForce GTX 1080 Ti 11GB SC Black Edition Video Card (£689.99 @ Aria PC)
Case: Cooler Master - MasterCase H500P ATX Mid Tower Case (£134.96 @ Ebuyer)
Power Supply: SeaSonic - FOCUS Plus Gold 850W 80+ Gold Certified Fully-Modular ATX Power Supply (£103.12 @ Amazon UK)

I'm looking at a 1080 instead of the Ti as I'll only be playing 1440p.. Can anyone advise on a specific card? No special budget tbh.

Let me know thanks.

NOTE: Colour scheme is mainly black and white.

I currently have the EVGA FTW edition. It's the 2nd FTW card I've had and no complaints on my end. It's only a 2 slot card too since some are 2 and a bit, going on 3.

These 1080 designs are a bit... off... should we say compared to last gens IMO.

For 1440p 60Hz, a GTX 1080 would be perfectly adequate. At this point though, I wouldn't be bothering with a GTX 1080 over a 1070Ti unless it's only like a £20-30 difference

That said, if you want, you can definitelt still squeeze a 1080Ti in and lower the price of the overall system. You'd have to make some slight sacrifices on case, motherboard, cooler, maybe RAM and PSU as well, but that should let you grab a 1080Ti. Up to you whether you'd rather make those sacrifices or get a lower end GPU.

Well 1440p at 144Hz would be magical imo.

Would a 1080 be able to handle this with games like GTA V, Arma 3 etc?

Thanks folks

Nah, you're going to want a 1080Ti for 1440p 144Hz IMO, especially for AAA titles like GTA V. That said, you could easily tune settings in GTA V to find a nice middle ground between highish settings and above 60FPS, so you won't have a bad experience with a GTX 1070Ti/1080 by any means.
