It's fine if you set the DMZ to the Xbox, make sure your Xbox has a DHCP Reserved IP address in the router, and manual routing information on the Xbox Side as well. This should ensure no other devices on the network have a DMZ on it and should keep your computers safe.

A firewall on a router is a packet firewall and filters packets inbound and outbound. Because this has been not making exceptions for your xbox and just filtering a lot of the packets, you get a closed NAT, even with port forwarding; the DMZ just makes the exception for the specific device on the network and let's all the packets through, this is why I only recommend doing this to the xbox and reserving the IP address to only the Xbox. This should make sure the firewall still works with the rest of your devices like normal.

demilitarised zone, basically opens up the port for everyone on the internet to connect without much security, demilitarised zone = no defence, open!

if you don't want to open ALL of the ports, you could always just port forward the specific ports listed on the xbox website for xbox one which can be found through a quick google search. I used to DMZ host my 360, never had any issues, but either way works.
