What is your budget and currency? 30.000 - 35.000 NOK
What will you use the PC for? Mostly gaming
Do you need a monitor? If not, what monitor(s) will you be using? Yes I need a monitor
Do you need a keyboard, mouse, or other peripherals? I need a headset
Do you need an operating system? Windows 10,home is fine
Will you overclock? Probably not

Ryzen 5000 CPU's should be available to buy in a month, so I've put the 3800x in there as a placeholder for the R7 5800x.
Definitely do not buy a 3800x, and not for that price. If you're going to buy a Ryzen 3000 CPU, just save a bunch of cash and grab a 3700x instead of 3800x.

Money left over, so you can put some of that towards a nicer/flashier motherboard and/or RAM if you want. Asus Strix X570 would be the motherboard I'd get if you're after something more expensive than the X570 TUF.

If it were me, I'd honestly probably go for the TridentZ Neo RAM because it's a pretty well priced 3600MHz kit regardless of being RGB.

1TB NVMe SSD is a bit of a no brainer, honestly you could maybe even bump it up to a 2TB drive with your budget, but I'll stick with 1TB for now, unless you want 2TB recommendations.
The Crucial P2 is great but in terms of NVMe SSD's, it is on the lower end so if you want to max out your budget a little more and get something better, then a 970 EVO is a pretty solid choice;

Case is going to be pretty subjective, and dependant on what is available. Typically I'd recommend a Phanteks P400A, but the Cooler Master NR600 is a perfectly good alternative, though you'll want to buy some case fans for the NR600.
Fractal Meshify C is another good alternative, though tends to be a little over-priced IMO. These are all more mid ranged cases, so if you want something higher end, I can also give some suggestions on those.

For a headset, Kingston HyperX Cloud 2's or Cloud Flight's are a pretty easy option to go to that will do you well. Alternatively, I would just spend some money on a good set of headphones and then sort out some sort of external microphone if necessary- this will end up being more expensive than just buying a HyperX headset though.

1440p144Hz monitor is also a no brainer in this situation, there are others to choose from as well but this AOC model is the best value I can find.
Grab whichever RTX 3080 you like/want, and is not ridiculously over-priced.
Add whatever capacity 7200RPM HDD you'll need/want.
