First off, what kind of monitors are you looking for? I would assume color accuracy would be very high for you, if so you'll be burning more money on such.

Gaming PC Build
Production Build
Production and Gaming Build

For all three builds I went about getting good production quality monitors, IPS or VA, high on the sRGB and HDR too. Each one is amazing and will give you exactly what you're looking for. High resolution, high refresh rates, low response times. Best part you're on gear that has Gen4 support and the upgrades you have to choose from are minimal and will give you a great edge in anything from rendering, publishing, editing, gaming, etc.

I would recommend the third build if you're really aiming at a dual monitor setup. And if you're just trying to get your standing for actual work production, go with the second one. I'm sure 21 will have some great build options for you too, don't know if he looks into sRGB and HDR ratings though. Something he'll respond to though since now I've posted this.
