So I redeemed a beta code to my call of duty account and selected Xbox. Since then I have removed the Xbox account I had linked and now can't link another because it doesn't work...

Also, if I were to update my account would the beta go to the new account or not?

I'm pretty sure once you sign up it'll go to the email associated with your cod account

People were giving them out recently. Maybe you can still find someone with the generator and they could help you
