So with my current build that I just finished like 2 or 3 months ago I only have one monitor and I am using my TV as a second but soon I will be getting my new desk and buying a triple monitor mount. I am not that intrested in triple monitor gaming but more for content creation, watching youtube and maybe some other things. I am looking for them to be 27 inches 2560x1440 and prefer IPS and the monitors don't have to be from the two I have on here these are just what I found when I was first thinking of building my PC. Oh and price range is preferably less then $1,000 USD for both so $500 each.

Well since you already have the build, I can't exactly rant on how pointless the 1800X purchase was had it at one point and went to a 1700, now a 1600, same chip lower speeds, and core count that is about it.
Non extremely color accurate panels, 60hz, well for your use is alright, but not worth it. You can probably snag a couple of ultrawide 1440p monitors for that price or a little higher, but do keep in mind your space.
Honestly, if you are just doing content creation, a good color rated 4k panel, and or you could go my old route and run two UW 1080p, the experience is nice across the board; whether gaming or editing. LG has color accurate panels over the sRGB spectrum which is nice for their price. could probably grab three within budget, which is overkill for any editing, but for gaming, if you like a surround feeling that's also nice.

Do mind you these are freesync but if you aren't gaming on them not much of a worry then. Used one of these before, takes a little adjusting with blacks to be a good color.

Any decent 1440p ultrawide will run you 550+ a piece, it really does down to preference for monitors. Just look around for price/color accuracy, and or if you're gaming, refresh rates.
