I don't know if I should get a gtx 980 or stick with the two 970s I'm using this for heavy gaming and modding on some games. all feedback is appreciated

A single 970 is more than enough for 1080p gaming. SLI 970s out-perform a single 980 so that is the better choice, if you need that much GPU power.

Get your OS for free. Pick up any cheap $5-$10 kb+mouse combo. It's not worth wasting money on unnecessary peripherals, unless it's getting spent on a good mouse, and/or good mechanical keyboard IMO. Swap the R5 for an H440 if you wish. Add another 8GB RAM in the future, if you need it.
