I have been picking up CSGO again, I am one of those players who have a good round followed by about 3 shit rounds, and have another good round again. I am aware of how aiming works, but recoil is still an easy evasion towards me getting the kill.
I am actually quite bad with snipers too..
Anyone got any tips? Maybe I just go up against better players? (People with 100+ hours, while im on 35).

The more time you put into the game, the better you become. The best way to get better is dedication, analyze your gameplay, watch tutorials, watch pro demos, practice your aim, by aim training, do movement training, surfing etc. Go train your aim against walls, get the feel for the guns, you need anymore help message me.

I would try to stay away from SMGs unless you're force buying and playing a position that favours the SMG. As for using the assault rifles, try to stray away from strafing while shooting, whether you're crouched or not. It makes you become inaccurate, while you can hit someone like that, the chances of you hitting someone like that, are minuscule compared to you stop moving, crouching and shooting.

Another thing, don't spray after your target. A lot of times when people run for cover, people will shoot, and drag their spray after the target. Don't. Again, chances are minuscule of you hitting and killing them as the recoil has now started kicking in and unless you know how to pull it down perfectly where you can spray like that, don't do it. It's fine to shoot a few bullets after someone when they're running away, but emptying almost all, if not your whole clip gives them a huge advantage if they decide to quick peek you.

Try to learn the recoil pattern for the AK47, M4A1-S or M4A4. Now you're not going to get it perfect center mass, and that's fine, as long as you can hit 5 shots in almost a perfect pattern, that's more than likely enough to kill someone unless you're shooting through cover or hitting their feet.

Try not to buy on a round, when your team can't. If you guys lose that round, that forces you to eco, while they can buy or will force them to eco with you. I have a problem with that at times as some people have enough to buy, but end up saving anyways, in which I'm one of the only ones buying that round.

Play as a team. As much as I prefer lone wolfing things, chances are, you're not going to survive a rush if you're by yourself, unless you have a range advantage and are using an AWP or auto sniper. Make as many call outs as you can, where an enemy is, if you hit him or not, grenades thrown, landed, whether they're yours or not and try to call out footsteps if you can hear them. Playing with friends would play much better in your favour because you won't have "randoms" and will have much more of a syncing energy with your friends.

Peek smart. I'm not saying you're playing stupid, I'm just saying peek smart, like if there's an AWP who knows where you're at, don't peek them. Unless they can't aim, they will end up hitting you, at the very least tagging you. It's fine to stutter step or try a slight shoulder peek to make them shoot and possibly miss, giving you time to either run away or even try to kill or tag them before leaving that area. A common thing I see people do, is run out of their cover, stop, crouch, try to hit an AWPer or will slowly crouch strafe out of their spot to peek the AWP, easy shot for anyone with an AWP. Even then, it's not bound to someone using an AWP, if you feel someone has a spot or sight advantage over you, try not to slowly peek to get a kill, just try to get out of there whether you tag, kill them or not because now you have info for your team where there may be one or a few more enemies at.

I'll get into a little bit more of it once you can provide a little more detail of how you play, like do you stick with your team, crosshair placement, how do you peek, do you buy grenades, ect, anything you can think of try to list and I'll get back to you. While I'm only Silver Elite Master, my recent games have been against Master Guardians and even a Master Guardian Elite, while my games about 2 days ago where against Gold Nova 2 - Gold Nova Master so I have seen quite the difference and adapted my play style how I needed accordingly.

Although this is good, you're wrong about strafing, I can strafe and still shoot at targets, making it more difficult for them to hit me, for example:

This is a perfect example, scream has mastered movement and aiming.

Ahh, I should have been a little more clear about what I mean with "strafing." I meant when you get people who just run out, moving left or right, not walking, but just flat out moving left and right, holding A or D key, trying to hit people, that's where I've seen people falter with shooting.

i have >100 hours played so i'm still new too i'd say youtube a few tip videos and practice practice practice! practice makes permanent! just remember nobody is perfect even pro players have bad games! good luck!
