I recently got my RGH and I have watched videos of people installing their games through xexmenu and when I try to do this it only installs AUDIO_TS VIDEO_TS is there a way to fix this problem or do I just have to download isos?

Your problem is that your cd drive isn't paired to the console, most Likely happened while switching kv's. There's ways of fixing this but for now this is what you can do if you want to copy a cd.
Place your HDD and cd into a retail and install using dashboard.
Put HDD back into jtag and run nxe2god(note down the file path for ease of finding later) you can launch the game as A GOD container from the games tab.
If you want to put it on USB or just fully extract it, take the folder nxe2god created to PC and run god2iso then extract the ISO using any Xbox image extraction tool and move back to Jtag and launch the default.xex

You could do all that, or you could put the disk in your system, power it off and then install it.
The issue you are having is a common issue for JTAG/RGH with 16756
