i need to purchase an iphone but put it on a different company other thant att verizion etc someone mentioned an unlocked phone how does this work?

I'm not sure what you mean by how it works but an unlocked iPhone would be an iPhone that is not locked to one carrier and could be used and any GSM carrier.
Only problem is factory unlocking GSM iPhones(The ones from AT&T and T-Mobile) is just about impossible nowadays. AT&T has shut down the third party wholesaling market so getting a GSM iPhone unlocked is almost impossible unless the iPhone is already outside of contract.
You can buy what's called the R-Sim but my company has had a really bad success rate with using those for unlocks.

What i'd suggest, if you need an unlock iPhone, would be to buy a Verizon iPhone 5. Not only is it both a GSM and CDMA phone but it comes factory unlock right out of the box so you could use it on verizon or any other GSM carrier.
