So I'm upgrading my Corsair 650W to a Corsair RMx 1000W, hoping it will fit my GTX 980Ti. I'm also hoping by upgrading to a better PSU I will get better performance from my GPU as I don't think it is getting enough power...

Dude you don't really need 1000W PSU unless you wanna run sli cards, having more fans and LED's on your case but still 750w power supply should do it.

Edit- Power supplies do not make any impacts on your performance. PC components take voltage from your PSU as much as they need it.

If you're getting a new PSU, get an EVGA 850G2. 650W is more than enough for a single 980Ti. The 850G2 will give you room for upgrades and a 2nd 980Ti, if your motherboard has SLI support.
