I found this on the xbox website with other members asking the same question, this allows you to edit all your profile:

Go to the link that McNuggets provided, and enter in in the big box under `Bio` at the bottom. And hit `Save` when done.

It might take a few minutes for it to take effect on the Xbox 360.
